coconut tofu strawberry banana bread

i used a little bit of everything i had kicking around to avoid depleting all ingredients and instigating moar money spending.
here's an adapted recipe i have in the oven.
dry:
2 c whole wheat flour
1/2 t baking powder
1/2 t baking soda

wet:
2 1/2 mm bananas
1/2 c blended coconut tofu (the silken dessert stuff)
1/4 c soy milk w/ 1 t white vinegar (let sit to curdle)
1 1/2 t vanilla
1/4 c canola oil
1/4 c maple syrup
1/2 c golden yellow sugar

also add: 1 c chopped strawberries

preheat oven 350F.
combine dry ingredients. in lgr bowl, mash bananas w/ oil. beat in tofu + soymilk. add all other wet ingredients.
add dry ingredients. fold in strawberries.
8 x 4 loaf pan lined w/ parchment paper was used. bake about 1 hr.

(quam pulcherissima) banana chocolate bread

dry:
2 c whole wheat flours
pinch salt
1/2 and 1/4 baking soda
1/2 c cocoa

wet:
1 c golden yellow sugar
1/2 c and 1/3 c canola oil
3 bananas
1/2 c vanilla soymilk + 1 t vinegar (mixed together, set aside to curdle)
2 t vanilla

preheat oven at 350F.
in lg bowl, sift together dry ingredients, combine.
in smr bowl, cream together sugar and oil. add vanilla, bananas, and curdled soy milk. combine.
add wet to dry.
bake for 1 hr or until toothpick/knife/fork comes out clean.

it's like a big brick of banana brownie. make it. ....nau?

i was thinking of adding 1 T of ground flax seed to this as well.

Equipment:
8 x 4 bread pan

Ingredients
1/2 cup brown sugar
1/2 cups white sugar
1/2 cup margarine, at room temp
3 very ripe bananas, mashed well
2 cups flour
1/2 teaspoon baking soda
1/4 cup vanilla soy milk, mixed with 1 teaspoon apple cider vinegar
1 teaspoon vanilla
1 teaspoon cinnamon
1/4 teaspoon allspice
1/2 teaspoon salt

Directions
Preheat oven to 350 F. Spray a 8x4 bread pan with non stick cooking spray, or lightly coat with margarine.

Sift together flour, baking soda, salt and spices.

Cream together the margarine and sugars. Add bananas, soy milk and vanilla.

Add the wet ingredients to the dry. Mix well. Pour batter into pan. Bake for an hour to an hour 10 minutes.
